5 Ingredient Chicken & Asparagus

A quick and easy weeknight dinner, this delectable crispy chicken with lemon and butter sauce will be a sure favourite in your home.
Make sure you choose chicken with the skin-on, as this is what crisps up in the oven.
Serve with warm bread to mop up the yummy lemon-butter sauce.
For a variation, you can slice the asparagus into smaller pieces before cooking and toss it with the sauce and cooked pasta.

Ingredients (Serves 4)
4 chicken breasts or drumsticks (skin-on)
700 g green asparagus (or green beans)
2 lemons
12 tbsp butter
20 g parsley
200 g flour of your choice
salt
pepper
olive oil (for frying)

Method

Step 1/4
2 lemons – 700g green asparagus (or beans) – 20g parsley
oven – fine grater – lemon juicer – knife – cutting board
Preheat oven to 200°C. Zest and juice the lemon. Trim asparagus. Chop parsley.
Step 2/4
4 tbsp butter – 4 chicken breasts (skin-on) – 200 g flour (of your choice) – salt – pepper
ovenproof pan – paper towels – tongs
Add butter to an ovenproof pan and transfer to the oven. Pat chicken pieces dry and season with salt and pepper. Coat in your choice of flour and shake off any excess. Place chicken breasts into preheated ovenproof pan. Bake at 200°C for approx. 15 min., or until brown and crispy on the bottom. Flip and cook approx. 10 min. more, or until cooked through. Keep warm.


Step 3/4
700 g green asparagus (or green beans) – olive oil (for frying)

In the meantime, add some olive oil to a frying pan. Add asparagus to the pan and sauté until cooked through and brown in spots, approx. 8 min. Remove from pan and set aside.
Step 4/4
8 tbsp butter (for frying) – salt – pepper
Add remaining butter to the frying pan until it melts. Add lemon juice and season with salt and pepper. Once a thick sauce has formed, add asparagus back to the pan and coat in the sauce. Add lemon zest and some parsley. Serve chicken breasts with lemon-butter asparagus and garnish with remaining parsley. Enjoy!
